INTRODUCCIÓN
En 1979 se publicó una monografía colectiva que, bajo
el título de
International Research in Nutrition,
recogía
las ponencias que se presentaron en el Seminario Interna-
cional que tuvo lugar en Milán en 1977, organizado por la
Fundación Italiana de Nutrición. En dicha reunión, a la que
fueron invitadas instituciones similares de los principales
países europeos (Francia, Holanda, Inglaterra, Suecia y Sui-
za), además de la sección norteamericana del International
Group of National Nutrition Foundations European, parti-
cipó como representante de España el profesor Francisco
Grande Covián (1909-1995) (1). Su intervención estuvo
marcada por las limitaciones que, en su opinión, mostraban
en la España de la década de 1970 tanto la docencia como
la investigación en el ámbito de la nutrición:
“Regretfully, I have to take in my presentation a diffe-
rent approach than that taken by the previous speakers.
I cannot speak of the Spanish Nutrition Foundation, for
the simple reason that such a Foundation does not exist.

RESUMEN
ABSTRACT
E
l trabajo analiza la evolución de la nutrición en la
España del siglo XX y ofrece, desde la historia presente y
los usos del pasado, claves que ayudan a entender los retos
que tiene planteados en la actualidad. La dinámica positiva
alcanzada en las tres primeras décadas fue interrumpida por
la Guerra Civil y por la falta de continuidad que tuvieron las
políticas científicas, sanitarias, alimentarias y nutricionales
que habían sustentado los primeros avances. Aunque en los
años cincuenta y sesenta se retomaron algunas iniciativas
desde el ámbito de la bromatología y los programas de
nutrición comunitaria, sería en las décadas de los ochenta
y noventa cuando se empezó a normalizar el proceso, tras
el reconocimiento de la nutrición humana y la dietética
como titulación universitaria homologada, además de la
consolidación del asociacionismo científico y profesional y
de la actividad investigadora y la difusión de sus resultados.

he paper analyses the evolution of nutrition in the
Spain of the twentieth century and offers, from history mat-
ters and the uses of the past, clues to help understand their
challenges today. The positive dynamics of the first three
decades were interrupted by the civil war and the lack of
continuity of science, health, food and nutrition policies that
supported that progress. Although in the years 1950 and
1960 some initiatives were retaken from the field of food
science and community nutrition programs, it was in the
1980s and 1990s when the standardization of the process
began, after the recognition of human nutrition and dietetics
as a university degree, and the consolidation of scientific
and professional associations and research activities and
dissemination of results.
